Pina colada custard

Pina colada custard is Tangy and refreshing, orange lovers will find this gel heavenly. Use freshly squeezed orange juice for the very best flavor

Ingredients 
1½ cups silken tofu, well
drained
1 cup sweetened cream of
coconut, well mixed
1 cup canned pineapple with
¼ cup of the juice
½ cup granulated sugar
¼ cup cornstarch
¼ cup lemon juice
1 teaspoon vanilla extract

Method
Combine all the ingredients in a food processor or blender and process until smooth.

Transfer to a medium saucepan and cook on low to medium heat, whisking often, until the mixture starts to thicken, about 5 minutes. Do not let the mixture come to a boil.

Pour evenly into six 6-ounce ramekins. Cool, cover tightly with plastic wrap, and refrigerate for 4 to 8 hours before serving.

Store leftover custard tightly covered in the refrigerator.
