Coconut Tiramisu

Ingredients
COCONUT GARNISH
1 cup shredded dried coconut (sweetened or unsweetened; add ¼ cup powdered sugar if using unsweetened)

COCONUT CAKE
1¼ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
1 cup powdered sugar
(plus 2 tablespoons if using unsweetened coconut)
¼ cup vegan butter substitute,
at room temperature
1 cup minus 2 tablespoons
soymilk
1 tablespoon lemon juice
1 tablespoon coconut extract
½ teaspoon vanilla extract
½ teaspoon white vinegar
¼ cup shredded dried coconut (sweetened or unsweetened)

Method
To make the coconut garnish, preheat the oven to 300 degrees F Arrange the coconut in a thin layer on a baking sheet and toast it in the oven for 8 to 10 minutes, until it just begins to brown slightly. Immediately transfer to a bowl. If the coconut is unsweetened, stir in the powdered sugar. Set aside.

To make the cake, increase the oven temperature to 350 degrees F and oil and flour a 9-inch square baking pan.

Combine the flour, baking powder, and baking soda in a large bowl. In a separate large bowl, combine the sugar and vegan butter substitute and beat with an electric mixer until fluffy. Add

the soymilk, lemon juice, extracts, and vinegar and stir with a wooden spoon to combine. Add the flour mixture and stir until just combined. Fold in the
coconut.

Pour into the prepared pan and bake for about 30 minutes, or until a toothpick inserted into the center comes out clean. Cool on a rack for 10 minutes. Do not turn off the oven.
