GUISADONG SAYOTE (Sautéed Chayote Squash)

2 pieces chayote (sayote) squash
1 tablespoon vegetable oil
2 cloves garlic, minced
1 medium-sized onion, sliced
I medium-sized tomato, sliced
1/2 cup shrimps, shelled
1 tablespoon fish sauce (patis)
salt and pepper to taste

Peel the chayotes. Cut in quarters, cut out seed core, then slice quartered pieces diagonally into 1/4-inch thick slices. Set aside.

In a skillet over medium heat, sauté garlic in oil until lightly browned. Add onion, stir for one minute, then add tomato and cook until soft. Add shrimps, chayote slices, fish sauce and salt and pepper to taste.

Simmer over medium heat for 6-10 minutes or until chayotes are cooked. Stir occasionally to distribute flavor. Serve immediately.
