The GINATAANG SPINACH (Spinach in Coconut Milk) Recipe

GINATAANG SPINACH
Ingredients:
2 bunches fresh spinach, cut into 3-inch pieces
1/2 teaspoon ginger
1/2 cup diluted coconut milk
1 hot chili pepper
salt and pepper to taste

Method:
In a skillet over medium heat, bring coconut milk, ginger, hot chili pepper, salt and pepper to a boil. Simmer for 3-4 minutes. Add spinach and cook for 2 minutes.  Remove from pan and serve immediately. Serves 4
