Filipino Egg and Tomato Salad

The Filipino Egg and Tomato Salad Recipe For a less salty salad and for convenience, I substituted regular hard-boiled eggs in place of the traditional salted eggs. This salad is sometimes eaten as a main dish with steamed or fried rice. Serves 4-5

Filipino Egg and Tomato Salad
5 hard-boiled eggs
2 medium-sized salad tomatoes, diced
salt to taste
lettuce leaves

Peel eggs and dice in small pieces. Season with salt to taste. Season diced tomatoes with salt to taste.

Gently combine the hard-boiled eggs and tomatoes. Let stand for 20 minutes in the refrigerator. Serve on lettuce leaves.
